Robbie Richter
Operations/Pit Master
www.fattycue.com

Robbie Richter grew up in Rego Park, Queens, which is almost as far from the South and its slow-cooked pit barbecue as it is from Southeast Asia and its curry, chili, and fish sauce flavored cuisine. Before mastering Texas barbecue and opening the wildly successful Hill Country, Richter cut his teeth as a backyard barbecuer and had a successful stint on the competition circuit, including two trips to the Jack Daniel’s World Championship Invitational Barbecue. These days, as Fatty ‘Cue’s pit master, Richter combines the smoky arts with the flavors of Malaysia to create a never before seen type of barbecue that involves not only smoking such traditional cuts as brisket, chicken, and lamb, but also such less traditional items as ‘Cue’s signature beef belly bacon. And then there are those items that fall squarely within the newly created tradition of Southeast Asian barbecue. The growing list includes lobster, blue crabs, fish sauce as well as palm sugar and Cherry Coke syrups.  [[email protected]]
